Mixed Vegetables

It's no secret that Otter is not a big fan of vegetables.  Especially mixed ones - she absolutely hates mixed vegetables.  The rule when she was little was that she had to eat a certain amount of whatever vegetable I served for dinner.  She usually managed to do that, but she absolutely drew the line at mixed vegetables.  When she turned 18, she could have stopped eating the vegetable offering if she wanted to - however, she never realized it and so she continued eating vegetables at every meal.  When she was getting ready to move out, I asked her if she was going to serve vegetables at every meal just to see how loud she would squeal NO.  It was fun, actually.  What was even more fun was when I told her that she could have stopped eating them at all when she turned 18.  Talk about a "deer in the headlights" expression!!!!  It was one of those priceless parental moments, and I don't think she's going to forgive us for that one anytime soon.  :)

We like mixed vegetables so we've had them pretty often since Otter moved out.  Tonight, we had them again.  I warmed them in the microwave.  The old microwave took 2 1/2 minutes to warm them up enough.  I put them in the new microwave tonight and gave it 2 minutes.  About 1 minute, 45 seconds in to the cooking time, they started mixing on their own.  All over the microwave!  Corn, potatos and carrots were exploding all over the microwave.  Full-scale veggie slaughter!

Otter, you should have been here.  Of course, I probably would have asked you to clean the microwave up after the explosions...

Monday is done, only two work days left until Christmas/Holidays/Vacation!
